Coolina, I have so many things to say... this knife surprised me. I've had cutco and other ceramic knives for years. This knife I bought on a whim. They looked cool but how many things that look cool work. I cut sashimi for the first time with this knife and it cut to the level of the ceramic. I'm honestly impressed and coolina should know. I have five knives and after using this one... I trust them. I truly could not believe how it fileted ahi better than I thought. Now I want to run it through other meat. Coolina y'all impressed. Follow the directions though, oil with olive oil right after washing, wash well, dry, oil, back in the canvas and you'll never have a problem.
